There are a few appliances and utensils that I recommend for cooking plant based meals. You could live without them but they definitely make plant based cooking easier and more interesting and varied. Of course there are other essential items that you will need in your kitchen (like chopping boards, wooden spoons, mixing bowls, sharp knives etc.) but most of you would already have these things.
A Non-stick Pan
Cooking without oil requires a non-stick pan for many recipes. I cook tofu, pancakes and patties in my non-stick pan without a problem and I don’t use any oil.
The brand I use is Scanpan ceramic titanium. I love it and it has a 10 year warranty. I have had it replaced free of cost once, as the non-stick coating does tend to deteriorate over time. I got my pan on sale for around $100 which I thought was a great price. It also comes with a glass lid and it can go in the oven.
I have heard great things about Swiss Diamond ceramic titanium pans. I haven’t used one, but I have a friend who has used both Scan Pan and Swiss Diamond and definitely prefers the Swiss Diamond. If I have to buy another non-stick pan I would probably buy a Swiss Diamond.
I know of a number of people who love and highly recommend the stone non-stick fry pans, however I haven’t used them myself. They are cheaper than the ceramic titanium pans.
Pressure Cooker/Multi Cooker
A pressure cooker is a great time saver! It cooks potatoes or stewed apple in 5 minutes. It cooks dried beans and legumes in no time at all. A batch of chickpeas cooks in 25 minutes. Black beans and red kidney beans cook in 15 minutes. This would take hours in a regular saucepan on the stove.
I have a pressure cooker that goes on the stove top. However when mine dies I will replace it with a multi cooker, which is an electric pressure cooker as well as a rice cooker, slow cooker, steamer. You can also saute in it and it keeps food warm too.
High Powered Blender/Food Processor
I use my food processor all the time. I make my own dips and sauces in my food processor, such as hummus. It’s also essential for blending nuts.
