This recipe is a vegan alternative to parmesan cheese. It’s made from cashews and nutritional yeast flakes (aka ‘nooch’). Nutritional yeast flakes can be bought from the health food store. Some Coles supermarkets are starting to sell it in the health food section.
I use this as a topping on lentil bolognese, or other pasta. Also as a topping on pizza.
Cashew Parmesan ‘Cheese’

Vegan condiment based on cashews and nutritional yeast flakes
Ingredients
- 1 cup raw cashews
- ¼ cup nutritional yeast flakes
- ½ teaspoon salt
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
Instructions
- Place ingredients into a food processor and blend together until nuts are finely ground and resemble parmesan cheese.
- Store in an airtight container.
Thermomix Instructions
- Place all ingredients into Thermomix bowl. Blend together using turbo button 2-3 seconds, until finely ground (but not turned to butter).
- Store in an airtight container.
